so, osmosis is where water move from a higher concentration to a lower concentration through a partially permeable membrane. In this case the membrane is the cell membrane. When there is a high concentration of glucose in the water surrounding the potato the concerntration of water molecules is lower. When the concentration of water is lower outside the cell then there is a net (overall) movement of water outside the cell into the surrounding glucose solution. Eventually the concerations level out and there is no net movement of water. The decrease in the mass of the potato is cause by the loss of water from the potato cells.
