The GTI 5th gear is geared lower so the car revs higher than a normal VW. You can swap out the 5th gear with a taller 5th gear, get a few mpg, or just get a regular transmission. Keep your tires inflated to the maximum pressure, and drive like there is an egg on the gas pedal, keep down the RPMs Make sure the car is aligned so it rolls easily. Put a K+N air filter in it, and run at least a 2 1/2 exhaust and a free flowing muffler.
