Why does my fishfinger box tell me I can re-freeze my fish fingers after de-frosting?
Two reasons: safety and quality. Whenever you thaw something, it’s possible for bacteria to grow. When you freeze these bacteria, they don’t die again, they just go into hibernation. So if you thaw something for one day, then freeze it, then thaw it again for another day, it’s not starting over at day 1, you are starting on day 2. If you do this enough you can build up bacteria without realizing it. Secondly, when fish sticks are frozen at the factory they are done in an industrial blast chiller. This is like a freezer but much more effective, so it freezes the fish sticks muuuch more quickly than you can ever hope to do at home. When you freeze stuff in your home freezer, the slow freezing time allows for the formation of long, sharp ice crystals. These crystals can cut into the cell structure of the fish, ruining the texture and probably causing a drier product. In reality, you are probably fine refreezing your fish.
