It has a lot of salt and water probably the combination causes this…Interesting fact, it actually takes more calories eating/digesting celery then the calories in it…

Because its 95% water, and because its a vegetable and therefor will taste bitter unless you have weak tastebuds.

I never got that impression. Although it may have the nutritional value of water, it certainly is high on taste and is a favorite vegetable of mine to add to soups and pasta dishes that I cook. You could say that celery certainly does have a unique taste all to its own though.
