It’s difficult to avoid mold since mold spores are always airbourne. For all things to grow, you need a source of nutrients, water and a good enviroment. Bread has a source of nutrients (carbs and protiens) and some moisture inherent in the product. Water is just water… no nutrients unless you add some. That’s why bread molds faster than water. Also, bread will mold faster if you add additional moisture to the loaf.
