The spelling indicates which “style” of wing chun kung fu is being taught. Grandmaster Ip Man’s style is spelled “ving tsun”. It is similar to the way there are styles of Karate, with “Chito Ryu” style being quite different than “Kempo” style. Although the essence is the same there can be quite the big difference in the way the techniques are applied. A generic spelling “wing chun” generally denotes only a loose attachment to any one style. The style name and family lineage is an instructor’s “certificate of authenticity”.
