Why do we use slow moving rollers to press the juice and not high speed juicers?

A. Rollers physically press the stalks to release the juice. This process helps retain more nutrients in the final juice compared with using high speed juicing machines that cut the cane with blades. High speed juicers spin at very high revolutions and create friction and heat at the point of contact. Heat destroys many of the sensitive nutrients like vitamin C, enzymes, etc. Therefore, using slow moving rollers in our Cool Cane machines results in more nutrients in the cane juice.
