Group 1 metals have one s electron which is easily removed. All the other electrons are at much lower energies and are much harder to remove. So it’s always +1. A transition metal atom has a bunch of d electrons (and a couple of s electrons as well) which are all at virtually the same energy. So once you start removing electrons, it’s not much harder to remove one more.
