Why do things turn black when they are burned?

Not everything does. Some things turn gray to white. The black that you see in most things that burn is unburned carbon. The flame had forced out other more volatile components leaving behind the carbon and the nonflammable components. If combustion is complete enough, then even the carbon will be completely consumed and all that will be left is the nonflammable ash which is usually much lighter in color.
