Why do some recipes say to salt eggplant before using?
Taste recipe columnist Kate McGhie says: Many people believe salting draws out the bitterness; however, it only really draws out moisture. Bitter eggplants will stay bitter even when salted. The trick is to never refrigerate eggplants, as doing so adds to their bitterness. However, if you do salt the eggplant it will result in a firmertextured eggplant which is ideal for fritters and slow-baking.
