All milk, whether it’s skim, 1%, 2% or whole has the same nutrients. The difference is the fat content. Babies grow very rapidly, and they need lots of calories to do this. Also, fat is important for development of something called a myelin sheath. The myelin sheath is something that is produced around the axons of nerve cells. Without the myelin sheath, nerve conduction is slower (people with multiple sclerosis have damaged myelin sheaths). Basically fat is needed for brain and spinal cord development. However, I would discuss the preparation of baby food with your pediatrician. Infants under 12 months are unable to digest the proteins in cows milk. I’m pretty sure you should be using breast milk or formula until the child is at least a year old. Consult your ped… and I’m glad you’ve decided to make your own baby food. It’s usually healthier than the store bought kind which can have a lot of unnecessary additives, like coloring and preservatives, and it will save you money!
