It is much easier to transport a live animal that can walk into the truck than a dead one that has to be carried or dragged into it. The meat is freshest if the animal is slaughtered just prior to being butchered. Most Butchers do not travel to the farms or ranches to buy animals so the farmer or rancher has to take the animal to them. The same principal applies to Fruit and Vegatables.
