I’m not sure why Americans like blue cheese dressing. I’m quite certain not all Americans do, actually. But for those of us who like a sharp cheese flavor, a nice blue cheese dressing is quite a nice topping for a salad or a wonderful dip for “Buffalo Wings.” In the case of buffalo wings, I think the creaminess of the dressing helps negate some of the HEAT in the wing sauce. The traditional blue cheese dressing is a creamy concoction for which I’m certain you’ll get a couple good recipies. So rather than repeat that, let me suggest something a little different and (in my humble opinion) even better on a salad than the other type. First you make a basic tangy vinagrette: olive oil, red wine vinegar, dijon mustard, salt and pepper, minced garlic…. Then, just fold in a handful of crumbled blue cheese and let it sit in the refigerator for at least 30 minutes. It’s a nice tangy dressing — something a little different but still with the blue cheese flavor. Bon Appetit!
