The initial mixing of the flour and water through the entire mixing, kneading, rolling out, carrying to oven and removing of the matzah from the oven – handmade or machine made – NEVER takes more than 18 minutes, start to finish. If it takes more than 18 minutes, then it is not kosher for Passover. Thus, for all baking and cooking during Passover, only matza meal or cake meal are used.
