It’s written in their holy books, but lets look at a more practical side of it. Before modern refrigeration techniques, and other ways of preservation that are relatively new in our culture, most of the animals described as “abominable” are ones whose meat spoiled easily, and quickly. These animals also carried the risk of several different diseases (that we don’t have to worry about now with modern preservation and cooking techniques that were unavailable then.) This is a very practical thing for a culture to think “Don’t eat these things because they’ll kill you” transfers easily to “God obviously doesn’t want us to eat these things.
