Full width themes have a stretch point usually about 1 pixel wide in the header that is set to duplicate itself as many times as it is needed to fill in the space when it stretches to fit the viewers monitor resolution. There are ways to make your logo stretch with your theme to allow it to cover the whole header. If you are having a custom theme designed and would like your logo to cover the whole header we do logo work as well. If you would like to know how to do it yourself just ask for help in our forums.
