Why can I just specify a date and time for the notification instead of the number of minutes?
Notifications are tied to the ending time of the event rather than a specific time of day because the ending time may change. Such changes are a big reason for this site. If you specify a notification for one hour before the event ends, you will receive it one hour before even if the ending time changes. If you had specified a time of day that is one hour before the event ends when you entered it, it would no longer be one hour before if the ending time then changed.
