Why Buddha is sometimes shown very fat and othertimes very thin?

Simple quick and esy to understand answer: The thin Buddha is Siddhartha Gautama (circa Sixth Century BCE), also called Gautama Buddha, Shakyamuni Buddha or the Historical Buddha. The “Fat Buddha” is the Chinese depiction of the Future Buddha known as Maitreya Buddha or sometimes Maitreya Bodhisattva. He is also considered to be a Jizo or Ksitigarbha Bodhisattva. Still, this figure is NOT the historic Buddha. And when Buddhist think of Buddha, it is the slender Indian figure that comes to mind.
