Why are there different levels of roast?
Consider that the roasting process ‘cooks’ the coffee bean. Just like a good steak, beans can be cooked light (rare), medium (medium), or dark (well done) to produce the flavors hidden in the bean. Generally, a light roast will produce the earthy flavor of the bean itself. Some consider this under cooked and prefer a medium roast, which still carries much of the bean flavor. Still others prefer a dark roast that subdues the bean flavor some but adds a woody or nutty characteristic.
