Why are severe food allergies on the rise in children?

We know that allergies as a whole are rising in our population and therefore one would expect food allergies to rise as well. In the U.S.A. the current prevalence indicates more than 12 million Americans or 4% of the population, have food allergies. Three million of these are children.
