Potassium sorbate and sodium benzoate are both extracts from blueberries and other fruits. Potassium sorbate is the lactone acid from blueberries and acts as a natural preservative in Calorad. Sodium Benzoate is bacteriostatic and fungistatic under acidic conditions. it is used most prevalently in acidic foods such as salad dressings, vinegar, carbonated soft drinks, jams and fruit juices, pickles, soy sause, and mustard. Sodium Benzoate occurs naturally in cranberries, prunes, greengage plums, cinnamon, ripe cloves, and apples.
