Poppies were originally associatted with Armistce Day (11 Nov) but the first delivery of poppies that were sent to NZ arrived too late for NZ to properly publicise them. So NZ delayed their poppy day until the day before ANZAC day thus forming the link between ANZAC Day and the poppies.
