Penguins are being used as a symbol of Christmas because for half the world ice and snow are a part of Christmas and the winter season. Similar to snowmen, etc, they are a symbol for many people of cold weather. Recent movies like Happy Feet also educated people somewhat on these fascinating mammals and awakened business and entertainment industries to their potential for profit…hence, their introduction into the Christmas market.
