Why are metals used to make cooking utensils?
Generally speaking, metals have high melting points. That means they won’t melt when used at high temperatures during cooking. Additionally, the metals conduct heat fairly well, except in the case of stainless steel. The stainless pans have another metal “clad” onto them, and the cladding (aluminum or copper) represents metal with a fine ability to conduct heat. The cladding may be exposed, or may be “welded up” inside the bottoms of stainless steel vessels. Metal pans also stand up to wear as well as heat, and are tough and long lasting kitchen tools.
