Embers are hotter than burning wood because as the wood burns it actually turns into a charcoal. If you’re asking because you are thinking of grilling food – embers is the way to go. When cooking upon direct flames you end up with burnt food. This certainly isn’t a good thing! Always allow plenty of time for your fire to be built up nicely. Once the flames have went down and you’re left with a bed of embers in your grill or fire pit, you’re in business! Remember, even though you’re cooking with the embers you could still have flare ups when grease from the food drips onto the embers. Always use extreme caution and keep yourself a safe distance from the grill or fire pit. Once the food is done cooking you may want to keep the heat of those embers around. If so, just toss a couple more pieces of wood on the fire. Those hot embers will have no trouble keeping things toasty!
