This is a speculative answer that I will give in two parts. For the ghosts that have a scent of flowers, perfume, cigars or pipes, or other similar substances, it may be possible that this effect is a result of electron bonding with the actual cells on the surface of the skin while the person was still alive. This cohesive bonding may have been transmitted through the cells of that person via the electrons in the molecules of the cells, and thus was actually absorbed into that persons electromagnetic structure before death. This is similar to the way some people smell like cigarette smoke even though they are not currently smoking a cigarette and the scent is not in their clothes. A certain scent association may have been a synonymous with that person while alive, and thus had become part of their personal repertoire. The second explanation that I have for this question is for the ghosts who bring a less-that-pleasant scent with them. My thoughts on this are that most likely it is not
