Never having read any of the books, I’m basing this purely on the shows/movies. For all I know, the books could be rife with non-human allusions. Basically, I think it’s a combination of trying to interest a mainstream audience and limiting the budget. Only a die-hard Trekkie would get a kick out of a ship being named after a Vulcan historical figure, event, or place, whereas casual viewers would have an emotional connection to names based on Earth’s history and places. Also, with the majority of the crew being human, either born on Earth or whose ancestry reaches back to Earth, they would also get a sense of comfort living in a ship that is named after something of significance to their culture. Which leads into your question about the majority of Starfleet being human. I think it mainly just has to do with budget. Having to dress up half your cast (or more) in elaborate costumes for every scene/episode, or use special effects for a very unusual alien, will eat a hefty portion of your

Star Fleet is located on Earth. Therefore it stands to reason any ships that are built on Earth would have English (Earth) words for the name of the ships, why so many in Starfleet are human. The other planets have their own schools, like the Vulcan Science Academy. The Federation is made up of different worlds, yes, but those worlds have their own ships and crews so those ships would have their planet’s words for the names of those ships. EDIT–I never watched “Enterprise” so I was referring to what I know of the Star Trek universe based on TOS, TNG, DS9, and the movies. As far as I know there was only one Star Fleet which is what NASA turned into basically and only one Federation. EDIT–Sorry about the multiple posts, but I keep remembering details. Remember that Star Trek was written by people who were Earthcentric in their thinking therefore the ships had Earth names and not ones from Vulcan or Andoria.
