This isn’t a direct answer to your question. However, I had to answer it anyway. The *best* restaurant I’ve been to in Spain is in Valencia and it’s called Ca’n Bermell. We had a truly wonderful Arroz Negra (Black Rice) which is rice with octupus link and seafood. Although it’s not paella, it was superb and my husband and I still reminisce about it!
