Items mailed through regular mail would travel from the postal service of the country they are shipped from to the postal service of the country they are shipped to. So a letter or parcel mailed in Canada with Canada Post will be delivered by the Australian Postal Service. Depending on the type of delivery it can take up to several months. A parcel sent by air should be there within a couple of weeks allowing for Customs clearance while a parcel sent by surface mail can take up to 2 months. I have a friend in Australia and we often send parcels to each other so the times I have given are based on personal experience.
