American-style chocolate brownies Serves 6 Preparation time less than 30 mins Cooking time 10 to 30 mins Ingredients For the brownies 180g/6¼oz dark chocolate, broken into squares 150g/5¼oz unsalted butter, plus extra for greasing 120g/4¼oz caster sugar 2 free-range eggs, lightly beaten 50g/1¾oz plain flour ½ tsp baking powder 1 Snickers bar or similar confectionery For the sauce 140ml/5fl oz double cream 1 tbsp golden syrup 140g/5oz dark chocolate, broken into squares 25g/1oz butter To serve vanilla ice cream Method 1. Preheat the oven to 180C/355F/Gas 4. Grease a 20cm/8in round sandwich tin and line the base with baking parchment. 2. Melt the chocolate in a heatproof bowl placed over a saucepan of barely simmering water (do not allow the water to touch the bottom of the bowl), or in a microwave on low. TRIPLE CHOCOLATE FUDGE 1/2 cup butter 4 1/2 cups sugar 1 can (1 1/2 cups) evaporated milk 4 1/2 cups mini marshmallows 2 cups chocolate chips (semi-sweet) 1 12 oz bar sweet baking chocolate, chopped 2 1 oz squares unsweetened chocolate, chopped 2 teaspoons vanilla extract 1/2 teaspoon butter rum schnapps or amaretto 1 cup pecans, walnuts or macadamia nuts, chopped Line a brownie-sized baking pan with wax paper or foil, covering sides of pan. Spray with non-stick spray or grease foil with butter. Combine butter, sugar, and evaporated milk (do not use sweetened condensed milk) in a saucepan stirring over medium heat until butter is melted and sugar is dissolved. Preheat oven to 180oC/160oC fan. Grease an 18x28cm baking tin and line with grease proof paper. 2. Melt the butter and plain chocolate in the microwave using a low heat (or in a bowl over (but not touching the) simmering water). 3. Stir in the other ingredients into the butter and chocolate mixture. 4. Pour this mixture into the lined baking tin and bake in the oven for 30 minutes. 5. After 30 minutes stab the brownies with a sharp knife or skewer. The knife or skewer should come out clean, if not return to the oven for a further 5 minutes. 6. Remove from the oven and leave to cool in the tin for 10 minutes. 7. Turn out onto a cooling rack and removed the paper. Leave to finish cooling. 8.
