My mom started using this recipe about a year ago. I normally don’t care for banana bread, but I like this. The cream cheese makes it really moist and light colored. Cream Cheese-Banana-Nut Bread ¾ c. butter, softened 8 oz. cream cheese 2 c. sugar 2 large eggs ½ t. baking powder ½ t. baking soda 3 c. flour 1 ½ c. bananas, mashed (about 4 medium) ½ t. salt 1 c. pecans, chopped & toasted ½ t. vanilla Beat butter & cream cheese at med. speed until creamy. Gradually add sugar, beating until light & fluffy. Add eggs, 1 at a time. Gradually add dry ingredients to butter mixture, beating at low speed just until blended. Stir in bananas, pecans, & vanilla. Spoon batter into 2 greased & floured 8 x 4″ loaf pans. Bake at 350° for 1 hour, or until toothpick comes out clean. (8 little loaf pans at 350° for 30 minutes.) Cool on wire racks for 10 min. Remove from pans, and cool 30 min. before slicing.
