This answer was posted on MozillaZine?: “It sounds like you are writing messages in text-only and want to do HTML. To do this, go to the Tools menu, then Account Settings. For each of your accounts, go to the Composition & Addressing section. Check the box labeled “Compose messages in HTML format.” Now you should have all those font and image options when you write a new message.

It is possible you have it set to text only mode.  If you want these options you want to be in HTML mode.  If this is the issue then you can change it by going to the Tools menu, then Account Settings.  Then for each of your accounts, go to the Composition & Addressing section and check the box labeled “Compose messages in HTML format.” Now you should be able to change the font colors, font size, and font styling when you write a new message
