Which tool would be best for me- water spray or a regular carver?

Both carvers are great. The water mist is unique to the Turbo Carver. You may use it with or without water. With the water mist you will be ready to carve, engrave, or etch in glass or stone without as much concern about heat which decreases the life of your bur. The water mist greatly decreases dust from softer materials such as eggs or shell. When the water tank is empty or the water valve is closed a fine spray of air only is directed at the tip of the cutting bur. Many customers have commented that when using the carver on wood it is great having air lightly spray directly onto the carved surface at the tip of the bur as you cut into the material. This keeps the area clear of particles so that you can see the area more clearly.
