The Mac Mini will work with pretty much any monitor out there. The newest Mac Mini has an HDMI port and a miniDisplayPort. The HDMI port will work with any HDTV, or any monitor with an HDMI or DVI port. The miniDisplayPort will work with miniDisplayPort monitors like the Apple LED Cinema Display, and with adapters it will also work with any DVI or VGA monitor. And yes, you can use both the HDMI and miniDisplayPort at the same time to drive two monitors simultaneously.
