You either move the food through the waterfall of microwave energy (with a turntable), or distribute the energy before it reaches the food (with a stirrer system). If your microwave oven does not use a turntable, it probably has a stirrer system. For most everyday microwave cooking you won’t notice much difference between the two systems.
