Because you mentioned katana, it should be Japanese arts like jiu-jitsu, aikido, ninjutsu or kempo. I have seen some great jiu-jitsu techniques against multiple armed attackers. These rare stand-up techniques use atemi or pressure point attacks then special holds to control the opponent and use them as shields against others. Aikido is more refined but in actual usage, there isn’t much difference. Perhaps because aikido has roots in jiu-jitsu.

Bujinkan ninjutsu will cover all of those weapons/skills. As with any martial art you will find varying quality between different schools but it is a very complete martial art with strikes, locks, throws, takedowns and grappling all included as well as various weapons. Its not a quick art to get good at but it is rewarding.
