The fresh caked yeast is still “alive” and the powdered stuff will come to life when it takes on water but it isn’t as active because there are a certain number of “deaths” in the population each time it dries out. So regular (caked) is healthier yeast. I can’t say one is heathier to you as the consumer of this yeast… I don’t think which makes any difference as far as eating it.
Both kinds of yeast are idential organisms, and they produce exactly the same effects. The instant yeast is ground into smaller particles, so it dissolves faster and rises faster. But it’s biologically identical to the regular stuff. Bread machine recipes usually call for instant yeast. If you’re making bread by hand, pick whichever one you prefer.
