Which grill prepares food best: gas or charcoal?
Well, that’s a trick question, Sparky. Gas, although it is very convenient and the flames can be modified easily, leaves most food with a taste of fuel. One may naturally assume that charcoal would be a better fuel for grilling. Yes and no, depending on the charcoal. If one were to grill with Matchlight–a fuel-soaked form of charcoal–one will not escape the dreaded fuel taste of the food. However, one may choose to grill with regular–I prefer Kingsford–charcoal, and the fuel taste will be avoided altogether. What about the inconvenience of charcoal grilling? That is corrected with a charcoal chimney that stacks the regular brickettes and, with a piece of newspaper as ignition, readies the coals in a matter of minutes. So, in short, use regular Kingsford brand charcoal and prepare the coals in a charcoal chimney.
