Umm… unanswerable question completely depends on your skill level and the size of the sails in your quiver For me, I love nothing more than 17 knots with my 6.2, but I’ll take 13 knots with my 8.5 and not complain… Just more work. The smaller sail I can use the happier I am Now, I’m guessing you really have no idea what you’re doing and have never planed before (subplaning windsurfing isn’t really windsurfing, you’ll learn as soon as you experience it), so for you, 8-10 knots with a small sail would probably be sufficient.
