The alcohol bakes out of the cake. So when you eat the cake, you are not eating any alcohol. Some extracts have propylene glycol instead of alcohol. You would just have to read the labels, and it would be more likely to be an imitation vanilla. Another option would be to get a vanilla coffee syrup and use some of that in place of part of the liquids in the recipe, to get the vanilla flavor without the alcohol. You may also be able to find powdered vanilla…Adams makes one but it’s hard to find in the grocery store.
