Where do the fat, oil and grease come from? What kinds of problems do they cause?
They come from many sources. In the food industry, grease is often refers to fats and oils derived from animal and vegetable sources. These include meats, cooking oils, nuts, cereals and beans, as well as waxes and paraffins Grease hardens as it cools when poured down a drain. Even when mixed with hot water, the grease will separate out and settle in plumbing systems and sewer lines. Pouring grease down your kitchen sink cost the District thousands of dollars per year in maintenance expense. All fats, oils, and grease should be poured into containers for disposal. Restaurants should have grease traps install so the grease is contained and does not enter the Districts sewer system.
