Where do Omega-3s come from?
EPA and DHA are manufactured in the chloroplasts of certain phytoplankton (algae), and then concentrated in the fish as they feed on the phytoplankton. No vertebrate animal can make omega-3, omega-6, or omega-9 fatty acids, because we lack the enzyme that can put a double bond at the 3, 6, or 9 position of the fatty acid molecule. The concentration of EPA and DHA produced by the phytoplankton vary each year.
