Where did the dish red beans and rice originate from?
Red beans & rice is a Louisiana Creole dish, traditionally made on Mondays. It is an old custom from the time when ham was a Sunday meal & Monday was washday. A pot of beans could sit on the stove & simmer while the women were busy scrubbing clothes. It is one of the handful of dishes in New Orleans cuisine to be commonly cooked in people’s homes & in restaurants. Yum!
