Do you mean to buy the plants to grow them? Or do you want to pick the flowers from wild elderberry to make Elderflower champagne? Ask the local garden centers if you want to buy plants. Take a drive out into the countryside in a few weeks and there should be plenty in hedgerows and wood edges. Best time to pick them is early in the morning (sunup) when the dew is still on them. My mother and grandmother used to make it. So I went out to help them. Also, think about elderberry wine later in the year. It is excellent (and proven) to help fight flu through the winter.
