Unless seals have started to migrate to Australia, then your out of luck, in Japan the cull small whales in a coastal town and eat the flesh and fat, so you may have to make a trip there, as a chef here in Canada I prepared whale blubber (narwhal) and cooked seal flipper, in our province of Newfoundland, they cull the adult seal population to keep them from eating all the coastal fish stocks, what the do is dry and salt the flippers, then wash and boil them to remove the meat, in the winter the grocery stores sell a dish called “Flipper Pie” it like a beef meat pie with seal meat, I made them and ate a few when I helped open a hotel there when I worked for a major Canadian hotel chain. Whale blubber tastes like fishy pork fat, and as for cow heart, it is a bit livery and has to be slow cooked like Bully beef, you might start off with a pigs heart as it smaller, cheaper and why pay the money for something you may not like.
