In your “home” folder (“/Users//” resp. “~/”) in the hidden folder “.wine”, and in your preferences folder (“/Users//Library/Preferences”) in the file “org.wine.winehelper.plist”. You can get into (even hidden) folders in the Finder by pressing Shift+Command+G and entering the path, for example “~/.wine”.
