Where are the food scraps coming from?
There may be several places at your event that produce food scraps. We suggest you start collecting from areas over which you have the most control, such as at vendor prep areas and bussing or dishwashing stations. Asking your event customers to sort out their food waste as they throw away their garbage (known as “post-consumer collection”) is problematic so we recommend that you do not start with this type of collection.
