When Writing A Non-Fiction Book, Is It Absolutely Essential That Footnotes And References Are Used?

I’m in the middle of writing my first non-fiction book. I have found it quite difficult to keep adding the sources. I had written around 70 pages and had to go back through again to quote the references. It took a long time. Someone told me that as well as providing credibility to the book, it’s also necessary if you get sued. Publisher’s prefer to see your references, as it avoids costly court cases. Fortunately I kept all my notes – so far 3 lever arch files. Are you writing onto paper first – or straight onto computer.? I’ve been trying to find a simple way of doing this in MS Word.
