When will all restaurants be required to comply with the new CFSM guidelines or be penalized?
All food service establishments that hold a valid food service permit prior to the implementation date of December 1, 2007 will have until December 1, 2009 (two years) to employ a CFSM before an establishment would be cited. All food service establishments that are issued a food service permit after the December 1, 2007 implementation date will have ninety (90) days from the issuance date of the food permit before the establishment would be cited.
