When using quotes for english literature exam do they have to be exact?

If you’re worried about quotes being too long, you can use ellipses (…) e.g. She said that she hated him and wanted to move out –> She said that…she wanted to move out. If it’s just spelling you’re worried about, it is an English exam so your spelling should be generally accurate but if a few more complex words are spelled wrong it’s not going to make a massive difference. And in general I would try to stick to the real quote as much as possible, don’t make it up if you can’t remember it because the examiner will probably be able to tell. You can always paraphrase – it’s not as impressive as the quote but it gets the message across without having to know the exact sentence.
